Chablis is the northernmost appellation d'origine contrôlée of the Burgundy region in France. Its cool climate produces wines with more acidity and less fruitiness than Chardonnay grown in warmer ones. These often have a 'flinty' note, sometimes described as "goût de pierre à fusil" ("tasting of gunflint") or 'steely'. The Chablis AOC is required to use Chardonnay grapes solely. The "Premier Cru Montmains" is located South of the Commune of Chablis and is one of the more famous Premier Crus, with two particularly well-situated plots selected for this blend. Founded in 1750, Domaine Chanson is based in Beaune in the heart of the Burgundy region. The medieval Bastion de l’Oratoire, at the heart of Domaine Chanson, is dedicated wholly to the ageing and safeguarding of wines from Chanson’s 43 hectares of vineyards. The four storey structure provides an exceptional atmosphere for the maturation of fine wines, maintaining a constant level of temperature and humidity. It was purchased by the Bollinger family in 1999 and they have significantly improved the quality of the wines in recent years. This wine is full of fresh aromas of citrus and green apple. Well-structured and vibrant with fresh acidity and a lingering minerality. Try it with fish dishes like turbot or goat's cheese.
