Gyles Webb named his winery after the fictional Abbey of Thélème, dreamed up by a rebellious monk in 16th-century France. There was only one rule at the abbey: ‘Fay ce que vouldras’, which translates as, ‘Do what thou wilt’. Quite the winemaking motto!

A taste of South Africa’s most famous wine region, Stellenbosch. And what a wonderful intro! This blend of Shiraz, Grenache and Petit Verdot has been aged for 18 months in oak barrels to make for a juicy red that is full of black fruit and warm spice flavours. Just the match for braai, the South African-style barbecue.

Back in 1983 Gyles Webb threw in the towel on his Durban accounting job and decided to give winemaking a stab. It was obviously the right decision. The wines he made at Thelema Mountain Vineyards quickly found themselves among South Africa’s most sought-after, selling out quickly after each release. Now his son Thomas runs the operation, with a ‘ground to glass’ ethos that lets the terroir do the talking.

Thelema’s vineyards are among some of the highest in Stellenbosch, set on the rich red slopes of the Simonsberg Mountain on south-facing plots 530m above sea level. It’s the optimal set up for growing Cabernet Sauvignon, alongside other characterful red varieties such as those in this blend.
