'Croix Salans' Viognier

Winemaking is always a labour of love, but especially here: harvesters rise to pick grapes at 4 am in order to preserve the wine’s freshness. It’s obviously worth the effort as powerful aromatics of wild peach and candied apricot open up to a full body and long finish. Viognier originates in the northern Rhône but clearly it’s found a new home here in southerly Languedoc.

About the producer
Cooperative cellar Alma Cersius have a simple philosophy: wine should be nothing but delicious. Working with 152 passionate and committed winegrowers in the Languedoc region, their vineyards extend over 1,300 hectares overseen by consultant oenologist Guillaume Bonzom. They work to harvest grapes at optimal ripeness and adapt grapes to terroir and climate.

About the region
Alma Cersius’s vineyards – spread along the Canal du Midi Unesco World Heritage Site in the Béziers region – benefit both from reliable southern sunshine and the refreshing proximity of the Mediterranean. The grapes are rooted in alluvial soils made up of pebbles and clay.

Enjoy this wine with Butternut Squash, Sage & Blue Cheese Pithivier. Viognier's aromatic and fruity character work superbly with the sweetness of the squash, and also helps to balance the salty tanginess of the blue cheese.
