'Castellaro' Soave DOC Classico Superiore

A sister sipper to the hugely popular Foscarino Soave, this bottling is part of the Domini Veneti collection of wines, which explores different Italian regional crus. Castellaro comes from the local word ‘Castellarum’, the hillside forts that were historically built to protect certain valleys. Part-ageing in French oak gives it enhanced character.

About the producer
Founded in 1933 by six locals, cooperative Cantina Negrar was formed as an effort to defend the Valpolicella and Veronese wine-growing areas from speculative development. Their vineyards now encompass over 133 hectares, tended by 230 winemaking families using sustainable means.

About the region
One of northern Italy’s best-loved white-wine regions, Soave is made mainly with the Garganega grape, although Trebbiano di Soave and Chardonnay are also permitted in some quantities. The growing area covers the verdant hills outside the city of Verona. In the case of Castellaro, vines are higher than most – hence the reference to peak-topping forts in its name.

Food Pairing
Enjoy this wine with Seafood Stew with Saffron & Fennel. A saline note in the wine is a perfect complement to the seafood and a note of honey brings out the sweetness of the fennel.
