The little-known Solaris grape is prized for its ability to thrive at heights of 800m or more – just what’s needed in this extreme landscape. A dreamy aperitif, this bottling has floral and fruity aromas, with hints of citrus.

Established by the Grigolli family in 1972, Concilio has spent the past few years as part of the Cantina Sociale di Trento, a cooperative founded by 11 local farmers more than 65 years ago. Their vines are in Trentino’s Lagarina Valley, an area noted for producing elegant, fruity and mineral-rich wines.

With its landscape of snow-dusted peaks and plunging valleys, the Vigneti delle Dolomiti – the Italian Dolomites – is the pin-up example of a high-altitude wine region. The vineyards dotted through the area benefit from sunny, warm days and cool, refreshing nights that allow grapes to ripen slowly and gain plenty of complexity.
