About the producer
Although it’s set on the grounds of a 13th-century Benedictine priory, Le Prieuré de Saint-Céols was founded just 20 years ago by Pierre Jacolin. The baton has since passed to Marie and Joseph de Maistre, who practise sustainable Terra Vitis-certified agriculture and are in the process of converting to organic.

About the region
When it comes to white grapes, the Loire Valley is largely famed for Chenin Blanc. But Menetou-Salon – in the region’s eastern reaches – is one exception, majoring in citrusy, spicy Sauvignon Blanc. The sedimentary limestone soil, dating to the upper Jurassic period, combines with the influence of the mighty Loire River to create the perfect conditions for this popular grape.

Food and Wine Pairings
Pair this wine with Claire Thomson’s Fried Fish Fillets & Lemon Fritters with Herby Mayonnaise. This citrusy Sauvignon has a streak of refreshing minerality, along with crisp acidity which will stand up to the rich elements of the dish. The mayonnaise will highlight herbaceous notes in the wine.
