Of the vast array of fortified wines made around the world, Tawny Port is one of the most elegant. It’s lighter and softer than Ruby Port as it spends more time ageing in wood. Small casks are used instead of large vats. The greater ratio of wood imparts rich caramel, dried-fruit and nutty flavours. The standard age for a Reserve Tawny is 7 years of ageing, while 10 year old Tawny and 20 year old Tawny offer more developed flavours and complexity. Served slightly chilled, you won’t find a better pairing for sticky toffee pudding or pecan pie. It also makes an excellent choice for cheese and chocolate. Or simply enjoy it on its own as a refreshing digestif.
