Majestic

Founded in the 13th century by the Knights Templar, Château Peyrassol is rich with over a thousand years of history. Nestled in the picturesque hills of Provence, this historic estate has been a beacon of viticulture for centuries. The manicured state spans over 850 hectares, with its organic vineyards sitting right in the centre, where the unique terroir and favourable climate contribute to the exceptional quality of the fruit –  and in turn the wines.

The estate’s organic vineyards benefit from the diverse terroir of limestone, clay and schist soils, which impart distinct characteristics to the grapes. This diversity allows for thirteen different varietals to thrive in Peyrassol’s vineyards. These include red grape varieties, used for both rosé and red wines, such as Cinsault, Grenache, Tibouren, Mourvèdre, Syrah and Cabernet Sauvignon. And, although the estate’s white wines only represent five percent of their production, their plantings of white varietals include Rolle, Ugni Blanc and Semillon – primarily used for the Provence Blanc wines, but also to boost blends in the rosés. The Mediterranean climate, with its hot, dry summers and mild, wet winters, further enhances the grapes' quality – ensuring that each wine is a true representation of Provence’s terroir.

Château Peyrassol

That same level of precision and passion flows through to the winery and vinification too. Fabien Burani has spent his entire career in the vineyards of Provence – so who better to head up the winemaking team? Burani’s carefully controlled winemaking methods preserve the expressive aromas of each varietal.

After grapes have been harvested at dawn to ensure freshness, techniques such as delicate pneumatic pressing and maturation in a variety of containers are used, to get the best out of the aromas. For the rosé wines, grapes are pressed for only two to four hours – this is the only time the juice is in contact with the skins, ensuring that beautifully pale pink we know and love. For the white wines, the time on skins can be much longer, allowing for the unique aromatic flavours to infuse into the juice. The wines are then individually fermented in stainless steel vats, concrete eggs, stoneware jars or oak barrels depending on varietal; then blended to bring out the very best in each grape.

Peyrassol’s wines are a testament to the estate’s dedication to quality and tradition. The winemaking team combines centuries-old techniques with modern practices to create wines, particularly rosés, that are both timeless and contemporary. The result is a selection that stands out for its elegance, complexity, and drinkability. With Provence rosé a firm customer (and colleague) favourite, we’re particularly excited about the uprising of Provence Blanc. A newly invigorated style of white wine that’s been turning heads at our showcase tastings.
