The 16th century Domaine is now owned and run by British couple Charles and Ruth Simpson. The name of this cuvée means "the last varieties", the constituent grapes being the latest to ripen. They are vinified separately and partly oak matured before blending. Deep, opaque purple-black in colour, this is a dense and weighty wine. The nose is a brooding mix of black cherry, liquorice and hints of rosemary, and the palate is jammy with lashings of ripe tannins. Will partner steaks and hearty pork dishes over the next 3-4 years.
