Most of the Viognier for this wine come from vineyards near Minervois in the North-East of the Languedoc. Here the vineyards are at a slightly higher altitiude and a little cooler than on the plain.
Low temperature fermentation and lees ageing of this Sauvignon Blanc helps to retain the wine's more delicate aromatics, with fresh grass, green apple and gooseberry flavours.
