What I do is rely on our buyers to taste, and taste, and taste... and then produce interesting parcels of high quality wine, often from producers I’ve never heard of. Far from the weedy, acidic wines some ‘top’ producers dole out, this is lush, rich and tasty. With just a hint of new oak to balance the fruit, in Burgundian terms it’s a major ‘bargain’. I’d recommend drinking it with food that’s relatively simple to avoid overpowering it - sirloin steak, tomato salad and fresh baguette would be perfect!"
