The emphasis at Domaine Sarrazin is on preserving the freshness and purity of the fruit whilst maintaining the sense of terroir. This is done by limiting production though extensive pruning, a short period of oak ageing in both new and old wood and bottling the wines without fining or filtering, techniques which preserve the delicate fruit aromas. Floral notes and red berry fruits provide a crisp, fresh nose, the pure fruit flavours showing through on the juicy palate. Subtle oak provides structure to the wine, giving it a supple, rounded finish.
