This is a very versatile wine - if you like the crisp acidity bit ( like Scott Bailey ) then chill it well down. You'll still get some good depth of flavour without anaesthetisiing your taste buds. Put it on the back doorstep for an hour instead and a more buttery, smoother aspect emerges.
