As the mercury rises and the Winter garb goes back into storage our drinking habits often change to reflect these seasonal events.
The bold, tannic, heavy red so often accompanied by hearty fayre on cold, wet, windy nights are replaced, with chilled, refreshing white or rosé.
Does this mean white or rosé are our only options for cool, wine refreshment on a warm summers evening?
The answer is no.
There is however a simple rule to follow when deciding what reds to chill and match with lighter foods.
Nothing too full bodied and tannic!
Chilling a full-bodied wine can make the tannins seem hard and astringent. Also a tannic wine with fish can produce a nasty metallic taste as the oil in the fish reacts with the tannin. Lighter flavours can also be easily overpowered by heavy, fruity wine.
